Fresh Broccoli Salad
2 heads fresh broccoli (I used 3)
1 red onion ( I used a small vidalia onion)
1/2 pound bacon
3/4 cup raisins ( I let these sit in very hot water for a few minutes to help soften)
3/4 cup sliced almonds
1 cup mayonnaise (I used light mayo)
1/2 cup white sugar
2 tablespoons white wine vinegar
Place bacon in a deep skillet and cook over medium high heat until evenly brown. Cool and crumble.
Cut the broccoli into bite-size pieces and cut the onion into thin bite-size slices. I don’t like raw onion, so I chopped it and after the bacon was done, I wiped out the pan and sauteed the onion until it was just starting to soften and it was perfect that way. Combine with the bacon, raisins, your favorite nuts and mix well.
To prepare the dressing, mix the mayonnaise, sugar and vinegar together until smooth. Stir into the salad, let chill and serve.
I garnished with more sliced almonds.
