
Deviled Eggs
Ingredients:
4 eggs, hard boiled
1 Tbsp fresh herbs, finely chopped (I use parsley and chives)
2 Tbsp light mayonnaise
1 tsp fresh lemon juice
1 tsp dry mustard
1/4 tsp chili powder
1 pinch salt
1 pinch pepper
1 splash hot sauce
Paprika for garnish
Directions:
-Slice hard boiled eggs in half, from top to bottom and remove yolks; reserve whites intact.
-Place yolks and remaining ingredients, less paprika, into a bowl and mix well.
-Press through fine mesh strainer to get out all lumps and place mixture in fridge for at least 30 minutes to set up.
-Pipe yolk mixture into whites when ready to serve, and garnish with a small pinch of paprika.
